Pablito, also known as Paolo Beatino, hails from Alba, Italy. Alba is an enchanting land known for truffles and fine wines. His passion for rich, robust red wines permeates his craft. It ensures each cocktail is a masterpiece in a glass. Pablito started bartending at 24 to fund his law studies. Quickly, he discovered his true calling behind the bar – a love story that began at first sight.
Even after finishing university he preferred to put aside penal codes and law textbooks rather than his jiggers and shakers, he combed his handlebar mustache and specialized in mixing.
Pablito is not just a mixologist. He's an artist who captures the essence of his clients in every cocktail, with over 15 years of global bartending expertise and multiple awards under his belt.

For over 12 he was head bartender and manager of GF Party, a leading Turin company in the cocktail catering sector and since January 2022 he has been barmanager and head barman at the Gaf in Cambiano , a modern cocktail bar restaurant not far from Turin.

Pablito's magic doesn't stop there – he's the Martini & Rossi brand home ambassador, sharing his passion through courses, masterclasses, and experiences, the same he made for many years in Casa Martini and Terrazza Martini in Italy.

His idea is to bring the fashion of the Italian aperitif and the Dolce Vita style typical of the Bel Paese to the United States, with private or public bartending services of the highest level.

"I really think of my job as an art and so I consider myself an Artist. If I were born in 1800 I would have probably seen myself as an alchemist. I love to experiment and as painters do when they paint I begin with a blank canvas (my glass) I use the brushes (my tools) and I start mixing the colors (spirits and liquors) and in the end, I finish with a beautiful frame — the garnish for my cocktails!”
“I decided to move to the United States for love because my girlfriend moved to Los Angeles to pursue her acting career. Being my best supporter and my first fan, she suggested opening my own cocktail catering in LA (I have been the manager at a company leader in cocktail catering in Italy since 2011, I worked for the most important brands of fashion, like D&G, Gucci, and Hermes). At first, I was scared to embark on such a new and risky adventure so far from home, but once I got there, I realized the potential of opening a bartending business in a city where parties are non-stop and it’s always summer. And you know what they say, great things never came from comfort zones.”

I just use fresh fruit juiced the same day of the events and fresh fruit for garnish.
The syrups and the cordials are homemade and 100% naturals.
I make my personal liquors like Limoncello and Tangerine liquor.
I have all professional tools.
