Dirty Pit BBQ LLC is a community-driven pop-up barbecue company based in Rancho Cordova, California. Founded by Chef Michael Sanders Jr., we specialize in authentic Texas-style smoked meats and soulful homemade sides. Our motto, “We for the People,” reflects our belief that great barbecue should bring people together — from neighborhood gatherings to large catered events.
At Dirty Pit BBQ, we proudly serve signature favorites like slow-smoked ribs, tri-tip, pork belly burnt ends, brisket, chicken, and spicy hot links, paired with classic sides such as mac & cheese, collard greens, potato salad, candied yams, and baked beans. Every plate is prepared with care, seasoned to perfection, and smoked low and slow until tender and flavorful.
We’ve quickly earned a reputation as one of the best local barbecue pop-ups, with loyal customers following the smoke each weekend. Whether it’s a casual plate on a Saturday, a private event, or full-scale catering, Dirty Pit BBQ guarantees bold flavor, hearty portions, and a welcoming experience.

Additional booking notes
Dirty Pit BBQ offers two levels of service. Requirements depend on the option booked:
Standard Catering / Delivery
Food is prepared in advance and delivered hot and ready to serve.
No grills or smokers are set up unless the client has booked on-site cooking.
Client provides a clean serving area (tables, counters, or catering space).
Full On-Site BBQ Experience (Premium Service)
For clients booking the full Dirty Pit BBQ experience with tent and smoker:
Service Fee: On-site grilling is a premium service and must be added at booking.
Space: A minimum 15’ x 15’ flat, level outdoor space is required for tent, smoker, prep tables, and serving area.
Access: Parking/unloading area close to the setup site.
Power: No electrical power is required — our setup is fully self-contained.
Lighting: For evening events, client provides adequate lighting or allows us to set up portable lights.
Water: Clean running water nearby is preferred but not required (we can provide containers if needed).
Permits: Client is responsible for securing any required event/vendor permits.
Atmosphere: Light background music is welcome and encouraged — it connects perfectly with the BBQ vibe, adding to the relaxed, community feel we bring.
