Brew Dawgz serves farm-to-cart, gourmet sausages and hot dogs with out-of-this-world toppings! We focus on sourcing as local as possible and organic when available. We cater to all needs: gluten free, vegetarian, and vegan. Brew Dawgz will make your belly smile!

What to Expect
Brew Dawgz is completely self-contained. The only thing we would need access to is electricity if we are expected to serve at night. We can handle any event you have in mind.
We cook on a flat top grill right out in view and offer a large variety of signature sausages and hot dogs. Our sausages are cooked from raw so require from 10-15 minutes. Our hot dogs are ready in less than 5 minutes. All of our meat is currently locally sourced from Hickory Nut Gap Farms out of Fairview, N.C. We purchase as many of our ingredients, as are seasonally available, directly from local farmers and farmer's markets. Anything sourced from the grocer or food service is scrutinized for the healthiest ingredients possible. Our baguettes are made by Mad Batter Food and Film, and our Kim Chi is crafted by Lulu's On Main, both are quite delicious restaurants located in downtown Sylva, NC.
We house-make our super-tasty pimiento cheese, our citrus-y pico de gallo, our un-sweet coleslaw (we omit adding processed sugar in keeping with our focus on a healthy product), and our beef "Curtis Chili"! Our chili is a recipe handed down from my paternal grandfather Curtis Andrew Collins, to my father Christian "Chris" Curtis Collins Sr., and now to me. We also have vegetarian chili that is so good, but not house made currently.
We offer alternative canned sodas, usually a blend of various Hansen's and Blue Sky Beverage Company products, and bottled water . We provide a variety of Miss Vickie's individual serving, bagged potato chips.
And all is prepared, cooked and served with love and a smile!
My name is Curt Collins and I created, own, and manage Brew Dawgz!
This labor-of-love comes from many years cooking and serving food in other restaurants, 5 years as an organic farmer, my bachelors degree in Nutrition and Dietetics from Western Carolina University, and my love of hot dogs, but my unwillingness to eat most of the ones available in restaurants. As a result i have crafted a healthy menu using the best possible ingredients available; I cut no corners when making your food!

Our "set list" (menu) currently includes:
Sonoran Dawg- A Mexican Chorizo sausage laid in a bed of organic sour cream and topped with organic avocado, organic caramelized onions, organic pinto beans, chunky bacon, tomato, and fresh, organic cilantro, all in a toasted "Mad Batter Food and Film" (MBFF) baguette.
The Asian Invasion- 100% beef hot dog dressed with spicy, Asian mustard, "Lulu's On Main" house-made Kimchi, pickled natural ginger, fresh organic cilantro, crumbled, dried nori and toasted sesame seeds, all in a MBFF toasted baguette.
Cube Tube- 100% beef hot dog nestled in a bed of fresh, organic spinach, topped with house-made pimiento cheese, tomato, bacon, jalapenos and served in a MBFF toasted baguette.
Bombon- Chorizo sausage covered in bacon then drizzled with melted dark chocolate all cradled by a MBFF toasted baguette. When local, organic fruit is available the Bombon can be topped with it.
Curtis Chili Dawg- House-made 3-generation beef chili mounded in a bun (no hot dog nor sausage) and topped how you like. Vegetarian chili available also.
Gnomey My Homey- A Bratwurst sausage laid in a MBFF toasted baguette, covered in sauerkraut, and finished with dijon mustard.
Brew Dawg- 100% beef hot dog in a toasted bun of your choice, and topped with the self-serve toppings you desire.
Vegey Dawg- A vegetarian hot dog, in a toasted bun of your choice, and topped with the self-serve toppings you desire.
White, wheat, and gluten free buns available.

Influences & Inspiration
Brew Dawgz has been inspired by too many chefs and food establishments to name! In Sylva The Guadalupe Cafe has provided years of artistic and delicious plates. The now gone Spring Street Cafe, formerly in Sylva, also was a huge inspiration. For a direct source of influence I loved eating hot dogs at The Varsity in Atlanta GA, and at Snoopy's in Raleigh NC.
I also must include my family on both sides. Years of cook-outs and barbecues, especially with my maternal Grandfather Roy Hines Alford as chef, have all found there way into what i make for you!
If you read Brew Dawgz bio then you saw that I have a life-long loving relationship with good food! I've cooked and served for mom-n-pop's places and corporate restaurants. My undergraduate degree is in Nutrition and Dietetics, and i owned and managed an organic farm for 5 years. Blending all of this past together is what brought me to this point in life... Brew Dawgz!
